baked in puffed pastry with spinach puree and mushroom duxelle with layered potatoes and brandy demi-glace
MOSAIC OF SEARED JUMBO SCALLOPS
with sweet pea and shrimp risotto, saffron broth and crispy leeks
DUCK “TWO WAYS”
carved crisp breast and duck confit hash cake with spinach pureé and fig balsamic duck jus
GRILLED MAINE LOBSTER TAIL
with bouillibaisse sauce, clams, mussels, julienne vegetables, and garlic red pepper rouille
VEGETABLE TERRINE
layered vegetables baked in a delicate pastry with wild mushrooms, roasted red peppers, spinach pureé, roasted squash and porcini red wine sauce
